That seemed to kick the woman into gear, and she quickly made the drink he'd ordered and he paid with a generous tip before going to sit down at a table; close enough to keep an eye on Kat but far enough away to make it look inconspicuous.

Listen, a giant dragon can hide from a party of adventurers if it rolls a nat 20. It's always worth a shot. Besides, he doesn't expect to not be seen; he's trying to make it look like he hasn't noticed them.

Your shit was the best shit
I look in the water and fear what I see
I know it's no stranger but I know it's not me
My life is a lie that was uttered in jest
If I can't change at all, let me rest

You're implying creatures typically make skill checks
And that skill checks typically allow for crit-successes or fails

Creatures to take skill checks; PCs are creatures too so that's kinda obvious. And likewise, all creature skill checks can and will crit on either way.

Unless your DM's tweaked how Nat 20s or 1s work , skill checks don't "crit" or are automatically successful for rolling a nat 20. Those would apply to attacks. Even so, there are some skill attempts that would be impossible in any regard, such as a PC trying to vertically jump to the moon or something.

All up to the DM.
